
Blueberry Pancakes

The weekends at our house are for relaxation, spending time with friends and love ones, and the occasional diy project. But the one thing that is constant on our weekends is having a hearty and filling saturday morning breakfast! My husband along with our beloved dog loves pancakes. Yes, our dog is a spoiled little pooch and usually has a pancake to herself on the weekend. You can’t resist those sad dog eyes in our household.
So over the years I have managed to create a perfect pancake recipe that is not only delicious but dairy and egg free. You can also substitute the whole wheat flour for oat flour to make it gluten free as well. The pancakes are so light and fluffy but the mashed banana and vegan butter create a wonderful consistency. I hope you enjoy these pancakes as much as we love them in our household.
Blueberry Pancakes
These pancakes are a crowd favorite. These mouth watering pancakes are light and fluffy but also dairy and egg free!

Ingredients
2 cups whole wheat flour
4 tsp baking powder
½ tsp salt
2 tbsp coconut sugar*
3 tbsp dairy free butter, melted*
½ tsp vanilla extract
2 ½ cups almond milk*
1 ripe banana
1 cup blueberries
Optional Toppings
Fresh fruit such as blueberries or bananas
Peanut butter
Maple syrup
Cacao nibs
Jam
Dairy free whipped topping
Instructions

Combine flour, baking powder, salt and sugar in a bowl.

In a stand mixture or by hand mash the ripe banana till it turns into a paste. Add in melted butter, almond milk, and vanilla extract. Stir to combine.

Pour flour mixture into the liquid mixture till combined. Add berries and gently fold into the batter.

Pour the batter onto a hot skillet or griddle that has been sprayed with either non stick cooking spray or coconut oil. Cook until bubbly, roughly 3-4 minutes on each side until golden brown.

Top pancakes with optional toppings and ENJOY!
*In the recipe, I used coconut sugar as a sweetener. You can substitute other sweetners into this recipe such as stevia, agave nectar, etc.
*In the recipe, I used vegan butter such as Earth Balance Vegan Butter
*You can substitute any dairy-free milk into your pancake mixture by using coconut milk or hemp milk
