
Dairy-Free Banana Cream Parfait

This quick and easy banana cream parfait is a spin on the traditional banana cream pie. One of my husbands favorite desserts is pudding especially banana cream. So, I decided to put a spin on the traditional banana cream pie by making it dairy and refined sugar free. Here’s how you make it.
First, combine almond milk and coconut cream in a saucepan. In a small dish stir together cornstarch, coconut sugar, and salt until well combined. Add the cornstarch mixture to the almond milk and coconut cream until well combined. Use a whisk to avoid lumps when mixing together.
Bring mixture to medium heat until there is a low boil. Then reduce to simmer whisking constantly. While the mixture is at a simmer mash a banana and pour into the pudding mixture. The mashed banana adds a wonderful consistency but also helps bind the pudding together. Whisk together for 2-3 minutes until mixture is thickened.
Once pudding has thickened, take mixture of the stove. Add vanilla extract and stir until combined. Set aside. Let the mixture come to room temperature before assembling the parfaits. To assemble the parfaits see instructions below
Layering The Parfait
1. I used stemless wine glasses to serve my parfait as they are easy to hold and show the layers of the parfait.
2. Start layering your parfait with your banana pudding mixture at the bottom.
3. Next, add a layer of vanilla wafers on top of your pudding mixture. You could either leave them whole or crumble them on top of the pudding.
4. Thinly slice a banana and add banana slices on top of vanilla wafers.
5. Spread a layer of dairy-free whipped topping on top of your bananas.
6. Repeat, layers one more time.

Ingredients
¾ cup almond milk
1 13 oz can coconut cream
2 tbsp cornstarch
4 tbsp coconut sugar
½ tsp salt
1 mashed banana
1 tsp vanilla extract
1 banana, sliced
Whipped topping, dairy-free
Dairy free-vanilla wafers
Instructions
1. In a saucepan over medium heat, stir together almond milk and coconut cream.
2. Meanwhile, in a small dish, stir together cornstarch, salt, and coconut sugar until well combined.
3. Add cornstarch mixture into your almond and coconut cream, whisk together to avoid clumps. Bring liquid mixture in the saucepan to a low boil over medium heat and then reduce to simmer. Whisk every couple of minutes to avoid lumps.
4. While mixture is simmering, mash 1 ripe banana. Stir mashed banana into liquid mixture. This will help thicken the mixture.
5. Whisk pudding for 2 to 3 minutes until mixture has thickened.
6. Once pudding has thickened, take the mixture off the stove. Add vanilla extract and stir until combined. Set aside.
