
Dairy-Free Coleslaw

When I think of summer I think of barbeques and all the fixings. One of the fixings that I really enjoy is coleslaw. Unfortunately, most of the coleslaws I come across are either packed full of sugar or dairy products. So, needless to say I can’t have them due my dairy intolerance. So, I decided to make my own dairy-free coleslaw that is not only creamy but delicious. Here’s how I make it.
This quick and easy coleslaw recipe literally takes less than 10 minutes to make. Plus, I took the easy way out and purchased a pre-packaged coleslaw mix. You could make it even easier by purchasing shredded carrots as well. Start the recipe by mixing together the dressing. You will need lemon juice, honey, apple cider vinegar, dairy-free mayo, white pepper, salt, celery seed, and powdered mustard. Stir until well combined. I find this dressing has the same creaminess as regular coleslaw by using the dairy-free mayo.
In another bowl, combine coleslaw mixture, carrots, and green onions. Stir in your dressing until well combined. Refrigerate the coleslaw for 10-15 minutes before serving to marinate all the flavors.
This coleslaw is so versatile not only in the summer but all year round. I enjoy this side during picnics, barbeques, and on top of bbq chicken sweet potatoes. Hope you enjoy this coleslaw recipe as much as I do.

Ingredients
1 bag of shredded coleslaw mixture
2 cups shredded carrots
3 green onions, thinly sliced
½ cup dairy-free mayo
Juice of 1 lemon
¼ cup apple cider vinegar
⅓ cup honey
½ tsp white pepper
1 tsp salt
1 tsp celery seed
1 tsp powdered mustard
Instructions
1. Mix together lemon juice, honey, apple cider vinegar, dairy-free mayo, white pepper, salt, pepper, celery seed, and powdered mustard until well combined. Set aside.
2. In another bowl, mix together coleslaw mixture, carrots, and green onions. Add in your dressing until well combined. Refrigerate for 10 to 15 minutes before serving. Enjoy.
