Sheet Pan Fajitas

Easy sheet pan dinners are a must have in our home especially since my husband and I both work full time jobs. This is a go to meal on nights that I work late and the hubby can create a meal in less than 30 minutes. To make this even easier, I meal prep the chicken, veggies, and seasoning the morning of and place them in a freezer bag in the fridge for that evening's meal. All my husband needs to do is preheat the oven and spread the mixture on a sheet pan. It’s that easy.

 

So here is how I meal prep the morning of. First, I sliced the peppers, onions, garlic and chicken and placed into a freezer bag. I usually have on hand my taco seasoning in my pantry, so I sprinkle the seasoning and oil on top of the fajita mixture. Place the freezer bag in the fridge to marinade all day and it will be ready to go when you come home to prepare the rest of the dinner.

 

Once, you come home from a long day of work the meal is halfway completed. Easy peasy! So all you have to do is dump the mixture on a lined sheet pan and bake in the oven for 20 minutes. Top with your optional toppings and enjoy. Here is what I enjoy for my optional toppings.

 

Dairy-free cheese

Avocados

Guacamole

Dairy-free sour cream

Tomatoes

Black olives

Jalapenos

Salsa

Sheet Pan Chicken Fajitas

Sheet pan chicken fajitas is a meal that is quick and easy for a weeknight dinner that is cooked and prepared in 30 minutes or less that is bursting with flavor.

Prep Time: 15 minutes

Cook Time 20-30 minutes

Total Time: 25 minutes

Ingredients

Taco Seasoning

3 tbsp chili powder

1 tsp garlic powder

1 tsp red pepper flakes

½ tsp oregano

1 ½ tsp paprika

1 tbsp cumin

2 tsp salt

2 tsp white pepper

Fajita Mix

 

2-3 boneless chicken breast, sliced into strips or chunks

1 red pepper, sliced

1 green pepper, sliced

1 red onion, sliced

2 cloves garlic, minced

3 tbsp olive oil

1 lime, sliced into wedges

 

Optional Toppings

 

Cherry Tomatoes

Dairy-free sour cream

Avocados

Guacamole

Dairy-free cheese

Black olives

Lettuce

Instructions

1. Preheat oven to 425 degrees (F). Line a cookie sheet with a silicone pad or tin foil for easy clean up.

2. Follow the recipe above on how to make a quick and easy taco seasoning recipe at home.

3. Assemble the fajita mix by tossing together the peppers, onions, chicken, and garlic. Toss mixture with taco seasoning and oil. Spread fajita mixture evenly onto a sheet plan and bake for 20 minutes at 425.

4. After, fajita mixture is fully cooked squeeze lime wedges over top and serve with warmed flour or corn tortillas. See optional toppings above to add to your fajitas.
