Sweet Potatoes 4 Ways

Sweet potatoes are a crowd favorite at our house. I have recently been using them more due to the crazy weather we have been having in Fargo this winter. If you don’t keep update about the weather conditions in Fargo then let me fill you in. This year we have received over 58 inches!! I could go on a tangent about the weather but, I prefer not to bore you. Did you know that sweet potatoes are not only delicious but, are a healthy staple to add to your diet. Listed below are the health benefits of sweet potatoes:
-high in vitamin B6
-good source of vitamin D
-good source of potassium, manganese, and iron
Over the years I was tired of making the same ol’ thing with sweet potatoes. Sweet potatoes are a weekly side dish at our house as they are versatile and a great source of nutrients and vitamins to add to your weeknight meals. So instead of making our usual side dish of roasted sweet potatoes I decided to spice it up by stuffing sweet potatoes. People usually think of stuffing the traditional russet potatoes but I decided to stuff sweet potatoes as I find they have more flavorful than russets. So hope you enjoy these four stuffed sweet potato recipes below as they are packed full of flavor and an easy meal to make in under 30 minutes.
Sweet Potatoes 4 Ways
Buffalo Chicken stuffed sweet potato
BBQ chicken stuffed sweet potato
Taco stuffed sweet potato
Sloppy Joe stuffed sweet potato
Buffalo chicken stuffed sweet potato
Yield 4
Prep Time 10 minutes
Cook Time: 1 1/2- 2 1/2 hours
Total Time: 1 hour 40 minutes
Ingredients
4 sweet potatoes, medium in size
3 chicken breasts
¾ cup of buffalo sauce*
2 tbsp olive oil
1 tsp garlic powder
Pinch of salt and pepper
Optional Toppings
Dairy free cheese *daiya cheese
Green onions
Chives
Dairy free ranch dressing
Dairy free sour cream
Instructions
1. Wash sweet potatoes and puncture them with a fork. Place sweet potatoes on a plate and microwave for 6-8 minutes depending on your microwave wattage.
2. While your sweet potatoes are in the microwave, place chicken in a medium size crockpot. Pour buffalo sauce and garlic powder on top of the chicken breasts. Make sure the chicken is fully coated in the buffalo sauce. Cook on high for 1 ½ hours to 2 ½ hours or on low for 4 hours to 5 hours.
3. After sweet potatoes are softened place them on top of a sheet of tin foil. Rub sweet potatoes with olive oil and a pinch of salt and pepper. Wrap sweet potatoes in tin foil and place aside. *I usually complete this step in the morning and place sweet potatoes in the fridge prior to going to work to speed up the cooking process when I arrived home from work.
4. Preheat oven to 350. Once you are ready to eat, place sweet potatoes in oven for 20-25 minutes to heat and cook through. While you sweet potatoes are cooking, shred your buffalo chicken.
To serve, cut sweet potatoes lengthwise and top with chicken mixture. Add additional toppings or condiments.

Sloppy Joe Stuffed Sweet Potatoes
Yield 4
Prep Time 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes
Ingredients
4 Sweet Potatoes
1 lb ground beef
1 cup chopped onions
½ cup carrots, diced
½ cup celery, diced
1 cup green pepper, diced
2 cloves garlic, minced
1 tsp apple cider vinegar
1 tbsp mustard
2 tbsp Worcestershire sauce
14.5 oz tomato sauce
2 tsp paprika
1 tbsp chili powder
1-2 tbsp coconut sugar
Salt and pepper for seasoning
Instructions
1. Wash sweet potatoes and puncture them with a fork. Place sweet potatoes on a plate and microwave for 6-8 minutes depending on your microwave wattage.
2. While your sweet potatoes are in the microwave, sauté ground beef in a skillet.
3. After sweet potatoes are softened place them on top of a sheet of tin foil. Rub sweet potatoes with olive oil and a pinch of salt and pepper. Wrap sweet potatoes in tin foil and place aside. *I usually complete this step in the morning and place sweet potatoes in the fridge prior to going to work to speed up the cooking process when I arrive home.
4. Sauté carrots, celery, pepper, and onion in the same skillet for 8 to 10 minutes until vegetables are tender. Add garlic and cook for another 1-2 minutes or until fragrant.
5. Add coconut sugar, vinegar, mustard, Worcestershire sauce, tomato sauce, paprika, and chili powder to your vegetable mixture. Bring to a boil and reduce heat to simmer. Cover skillet and cook sloppy joe mixture for 15 minutes.
6. Season with salt and pepper to taste.
7. After sweet potatoes are softened place them on top of a sheet of tin foil. Rub sweet potatoes with olive oil and a pinch of salt and pepper. Wrap up sweet potatoes in tin foil and place aside. *I usually complete this step in the morning and place sweet potatoes in the fridge prior to going to work to speed up the cooking time when I arrive home.

Taco Stuffed Sweet Potatoes

Ingredients
4 Sweet Potatoes
1 lb ground beef
2 or 3 tbsp water
Taco Seasoning
3 tbsp chili powder
1 tsp garlic powder
1 tsp red pepper flakes
½ tsp oregano
1 ½ tsp paprika
1 tbsp cumin
2 tsp salt
2 tsp white pepper
Additional toppings
Dairy free cheese *daiya cheese
Salsa
Guacamole
Green onions
Black olives
Tomatoes
Instructions
1. Wash sweet potatoes and puncture them with a fork. Place sweet potatoes on a plate and microwave for 6-8 minutes depending on your microwave wattage.
2. While your sweet potatoes are in the microwave, start browning your ground beef on the stovetop. While your ground beef is browning mix together your homemade taco seasoning. Pour taco seasoning over browned beef and add water. Cook for additional five minutes.
3. After sweet potatoes are softened place them on top of a sheet of tin foil. Rub sweet potatoes with olive oil and a pinch of salt and pepper. Wrap sweet potatoes in tin foil and place in preheated oven to 350. Bake sweet potatoes in oven for 20-25 minutes until Sweet Potatoes are tender.
To serve, cut sweet potatoes lengthwise and top with taco mixture. Add additional toppings or condiments.

Barbeque Chicken Stuffed Sweet Potatoes
